It’s fall and the weather is already getting quite chilly here. We’ll be enjoying some roasted rosemary beets to help warm us up this weekend!

Really liking all the newness so far – can’t wait to see it all!

The new look is fab and it’s easier to find things. Curious as to what everybody is going to make with their scraps too.

I’m going to make something called an impossible pie. When it’s baked the mixture forms a pastry shell, egg custard filling and coconut topping but it’s all mixed up together in the same bowl! It’s a recipe that my mum found. Neither of us has cooked it yet. It might be nice or it might be a flop-who knows? I will show it, and the recipe on my blog when it’s made;-) Happy cooking/eating everybody. x

    Love the new look.
Chorizo sausage sliced, tin of 4 bean mix, red onion, tin of tomatoes, crushed garlic to taste. Cook onion, garlic and sausage, add beans and tomato and cook until liquid reduces.
Serve with crusty bread, a great Saturday lunch.

I’m really bad about buying tofu, meaning to eat it, and then it sits in my fridge for ages and I eventually have to toss it. I’m on a quest to actually use it this weekend- I think I’ll prepare it with eggplant and attempt an Asian-garlic sauce to go with. Great new look!

Oh yay! I really really really NEED to do something about the 3 totes I have of scraps! I even have Ideas. (whew!)
This whole week has been delicious cooking, Monday it was peanut butter fudge in my mother in law’s recipe. Tues was Tapioca Pudding. Wednesday was homemade cheese enchilada’s, Thursday was 2 kinds of bread, my normal GF bread and GF raisin bread (in which I accidentally added orange essence instead of vanilla and it was a delicious mistake). This weekend we’re having a cookout at a friends house and they’ve requested my egg rolls. This means I need to get to dicing and chopping and get about 150 egg rolls made for them to fry up!

This weekend, like most weekends, I’ll be roasting a chicken for my husband. I like to cut the chicken in half (since he’s the only family member who eats fowl) and freeze half for later in the week. I heat the oven to 425-450 with my big cast iron skillet on the rack. While that’s happening I rub the chicken with sea salt, black pepper, olive oil, and lemon juice, and place rosemary on top. When the oven’s hot, the bird goes into the pan along with some peeled cloves of garlic. 20-30 minutes (about 45 for a whole bird) and dinner is ready. Just add a vegetable and/or potatoes.

My mom and I are heading up to the apple orchards in Oak Glen this weekend and will be canning away on Saturday the idea is Apple Butter and Apple Sauce. I love homemade Apple Sauce… I love that there are still actual chunks of apple and that you can add in all the cinnamon your little heart desires… but most of all I love how when you add it to a little puff pastry you have an instant apple turnover. YUM.

Scrap buster tutorials…..hmmm…….I wonder what I can come up with.

I am making blueberry pie this weekend! I meant to make it last weekend, but that didn’t happen with birthday celebrations and other things. I’m using the recipe that Cook’s Illustrated had in one of their mags last year. It uses vodka in the crust! And partial fresh fruit, and partially jam that you make which cuts down on that watery quality that blueberry pie can tend to have. I can’t wait. Yummy!

  274. Suzette responds:

I’m on the don’t-eat-anything-exciting diet, so this weekend it’s hardboiled eggs, Wasa crackers, and sliced apples for pretty much every meal. Might make an apple pie for the family, though!

Mixed into a nice smorgasbord of flavors and aromas that have had time to infuse the food. In my fridge I have some ham and black eye peas. With a little broth and some carrots, this will become a wonderful ham and bean soup. Too bad the heat came back full force ;)

Lot’s of eating out this weekend! Tonight we’re attending a wedding rehearsal; the dinner afterwards will be at our favorite Mexican restaurant. Tomorrow is a friend’s surprise birthday party at Buca di Beppo, and I’m excited because I’ve never been to one. Sunday is the wedding, and I really don’t know what they’re serving. Worries me a little, because I’m in the middle of a 21-day vegan challenge :)

Fried Green Tomatoes! Our tomato plants gave and gave the most delicious red tomatoes all summer. And they still loaded with green tomatoes now, which seem to have no interest in ripening. So, dredged in egg and breadcrumbs and then fried, topped with Gorgonzola dressing, they are mouthwateringly perfect!
